Unstuffed Green Pepper Casserole

Introduction

Number of Servings: 6

Ingredients

    1 lb lean ground beef, cooked and drained
    2 cups cooked rice
    3 cups tomato sauce
    1 diced green or red pepper
    1 diced small onion
    1 can diced tomatoes
    1/8 tsp pepper
    2 tsp garlic powder
    1 cup shredded cheddar or colby cheese, low fat

Directions

In a large skillet, sautee green pepper and onion to soften. Add tomato sauce, diced tomatoes, and spices. Cook until slightly bubbling. In a large casserole dish, mix together rice, beef, and tomato mixture. Bake at 350 degrees for 20 minutes. Stir in cheddar cheese and bake an additional 10 minutes.

  • This recipe was delicious. I did use cheese but next time I will add it about the last 20 minutes of baking. The cheese browned to much for my taste but overall, good recipe! - 7/19/08
