Whole wheat lasagna

Introduction

Number of Servings: 8

Ingredients

    Ground Turkey, 0.75 unit, yield from 1 lb raw
    minced onion, 1 Tbsp
    1/2 green pepper, chopped
    Ragu Spaghetti Sauce (tomato sauce), 3 cup
    Cottage Cheese, 2% Milkfat, 15 oz
    shredded Mozzarella Cheese, part skim milk, 8 oz
    Parmesan Cheese, grated, 0.5 cup
    2 eggs
    parsley, 0.5 cup
    Salt, 0.5 tsp
    Pepper, black, .25 tsp
    Water, tap, 1 cup
    9 Ronzoni Whole Wheat Lasagna noodles
    Zucchini (peeled and chopped), 1 medium

Directions

*Heat oven to 350 degrees
*Brown turkey with onions and green pepper in large skillet.
*Drain meat, add spaghetti sauce and water to turkey in skillet. Simmer on low for 10 mins.
*Meanwhile, steam zucchini in small pot (with water almost covering zucchini and top on pot).
*Also, in a medium bowl mix eggs, cottage cheese, half of the mozzarella cheese, parmesan cheese, parsley, salt, and pepper.
*In 13x9 pan add about 1 cup of meat sauce with 1/2 of the zucchini mixed in. Top with 3 UNCOOKED lasagna noodles (length wise). Top with sauce and 1/2 of cheese mix. Top with 3 more noodles, sauce, and cheese. Finish with another layer of noodles, sauce, and sprinkle top with remaining mozzarrella cheese.
*Cover with foil and bake for 45 mins.
* Remove foil and bake for additional 10 mins till cheese is bubbly.
