1 c. dry brown rice
1 medium onion, diced
1 1/2 c. black beans (if using canned, drained and rinsed well)
1 c. petite diced tomatoes
3 T. taco seasoning
8 leaves romaine lettuce
In a small non-stick skillet place onion with 2 to 3 tablespoons of water. Saute until onion is translucent. Add to pan with rice. Add beans, tomatoes and taco seasoning. Heat through.
Allow mixture to cool slightly. Scoop taco mixture into the 8 lettuce leaves, placing an equal amount of mixture in each.
Makes 4 2-piece servings.
