Southwest Lasagna Rolls

Introduction

I found this in Taste of Home Comfort Food Diet Cookbook (2008 edition) and modified it with what I had and what I wanted to add. I didn't get all the stuff into the lasagna noodles so I placed the remainder of it down the middle. Number of Servings: 10

Ingredients

    Can Hormel Vegetarian Chili with Beans
    Shredded 2% Mexican Four Cheese blend, 1 cup
    1 can of Black Beans
    1 can of Corn, Canned
    Low fat Ricotta cheese 16 oz tub
    Can of green chilies 4 oz can
    Taco Seasoning, 1 tsp

    Lasagna Noodles-10, cooked and drained
    Salsa, 2 cups

Directions

Cook noodles according to directions on package.
Preheat oven to 350.
Mix first 7 ingredients in a bowl. Then roll about a half a cup into each lasagna noodle. Place in greased pan, seam side down.
Cover and bake at 350 for 25 min. Uncover and add salsa. Then bake 10 more minutes.
