1 small cucumber, sliced thin
1 roma tomato, sliced thin
1/4 red onion, sliced thin
1/2 c. mixed greens (meslun)
1 T. tahini (I get mine at our local co-op)
1/2 large wheat pita
salt and pepper to taste
Slice the cucumber, tomato and onion thinly. In a bowl, toss veggies with tahini, salt and pepper. Slice large pita in half and line one half with the greens. Layer in the cucumbers, tomato and onion mixture onto the greens and add more greens to completely line the pita (it helps keep the pita from getting soggy too quickly). Enjoy!
This is a HUGE sandwich and VERY filling! At just over 200 calories it's a lot of bang for your calorie buck!
