Chicken low fat al la King

Chicken low fat al la King

Number of Servings: 4

Ingredients

    1 Onion, finely chopped
    1 stalk Celery, finely chopped
    1 cup Vegetable stock
    3 tsp Cornflour, to thicken if necessary

    400 g Chicken Breast
    50 g frozen Peas
    50 g carrot finely diced (or mushrooms)
    1/2 Red Peppers. finely diced

    100 ml Cream Single Alternative Alpro Soya
    Rocket, parsley or sage.

Directions

Simmer onion and celery in vegetable stock until soft (about 10 mins). Remove and liquidise. If the liquid is a bit think, thicken with cornflour slaked in a little water.

Add chicken breast, peas and red pepper. Simmer for 8-10 minutes, until chicken is cooked through, but still tender.

Stir in soya cream and rocket and heat through gently.
