Ingredients

    Ingredients

    4 medium yukon gold potatoes, skins on
    2 tablespoons 1 % milk
    1/4 teaspoon salt
    1/8 teaspoon pepper
    2 cups chopped cabbage
    2 tablespoons butter or margarine
    1/4 cup chopped onion
    2 tablespoons butter (for frying)

Directions

Scrub the potatoes because you will be leaving the skins on.
Cut into quarters and add to a pot of boiling water till tender about 15 - 20 minutes; drain, RESERVING WATER.
Add cabbage to reserved potato water and cook for 6 to 8 minutes, until tender.
While cabbage is boiling, place potatoes in a large bowl.
Mash with hand masher till well-mashed.
Add milk, salt and pepper and beat till fluffy.
Drain cabbage.
Melt 2 tablespoons butter in frying pan and saute onion until tender.
Add mashed potato and cooked cabbage to the onion.
Heat thoroughly, stirring constantly.
Serve
