Muffins with Carrots, Bran & Flax

Introduction

Thes muffins keep you full for hours.
Calls for 1 1/2 cups apple. I upped the carrots from 1 1/2 cups to two. Left out raisens. Could probably use differant vegies or fruits.

Ingredients

    Ingredients:
    Flour, white, .75 cup
    Flour, whole grain, .75 cup
    Flax Seed Meal (ground flax), 12 tbsp
    Oat Bran, .75 cup
    Sweet & Low 12 packets
    Baking Soda, 2 tsp
    Baking Powder, 2 tsp
    Salt 1/2 tsp
    Cinnamon, ground, 2 tsp
    Carrots, raw, 2 cup, grated
    Walnuts, 1 cup, chopped
    Nestle Carnation Evaporated Lowfat 2% milk, 3/4 cup
    Vanilla Extract, 1 tsp
    Egg, fresh, 2 large

Directions

Mix together all dry ingredients except sweet and low, carrots & walnuts. Mix together all wet ingredients, eggs, milk, & vanilla. Add wet ingredianta to dry then add the carrots and walnuts. Mix together but don't overmix or they will be tought. Fill muffin cups sprayed with vegetqable oil spay and bake at 350 for 20-25 minutes.
