Pizza Puffs

I used lower fat ingredients and took out the pepperoni. You can make it in either a mini muffin pan like Cathy, or a regular muffin pan like me.

Number of Servings: 12

Ingredients

    3/4 c. flour
    3/4 tsp. baking powder
    3/4 c. skim milk
    1/4 c. egg beaters (liquid egg substitute)
    4 oz. shredded part skim Mozzarella cheese (about 1 cup)
    1/2 c. pizza sauce
    Italian or Pizza Seasoning blend, to taste

Directions

Preheat oven to 375* F
Spray muffin pan with cooking spray
Mix flour and baking powder, then incorporate milk and egg beaters, then stir in cheese. Let it rest for 10 minutes.

Stir batter again and then divide between muffin cups (12 regular, 24 mini) Bake until golden and puffed up about 20-25 minutes

Microwave the pizza sauce until heated through, add extra seasoning. Sprinkle a little seasoning on top of the warm pizza puffs and serve. Dip the puffs in the sauce.

Great for those pizza cravings.

I like to eat 3 regular sized puffs, it's just easier to multiply however many puffs you eat by the calorie content in one.

for 1 mini muffin divide calories by 2.
