Cauliflower/Cheese Casserole

    1 onion
    1 tbsp butter
    2 tbsp whole wheat flour
    1/2 cup milk
    8 oz cream cheese [can use reduced-fat]
    8 oz cheddar cheese
    1 tsp Dijon mustard
    ground pepper
    herbs if desired

    10 cups steamed cauliflower

    bread crumbs for topping [about 1/2 slice bread]

Cook onion and flour in the butter. When onions are softened and flour is browned, add milk, cheeses, mustard, and pepper. Cook until cheese is melted and sauce thickens a bit.

In the meantime, steam your cauliflower. Really, you can use any amount--as much as your casserole dish holds.

When sauce is ready, mix with the steamed cauliflower in a casserole dish [spray dish with nonstick spray first!] Top with bread crumbs and bake at 350 until crumbs are crispy and sauce is bubbly.

Makes 8 servings or so.
