Ingredients

    16 oz - Chicken Breast, cut into cubes
    2 Tbs - EVOO
    1/2 tsp - red pepper flakes
    1 tsp - Cumin
    2 Tbs - Lemon Juice
    2 C - Vegetable Broth
    1 C - Bulgar Wheat
    1/4 C - Fresh Mint, chopped
    Black Pepper to taste

Directions

MARINATE:
In a bowl or bag add chicken, oil, red pepper, cumin and lemon juice. Toss and let sit for 10-30 mins.

COOK:
Prepare Bulgar wheat according to package directions substituting the water for the vegetable broth. Transfer to bowl and mix in mint and pepper.

Heat grill or pan and cook chicken thoroughly. Remove from heat and toss with bulgar salad.

Serve warm or cold.

8 Servings - 4 oz of chicken and 1 C of Bulgar.
