Mexican Chicken Soup

Ingredients

4 Boneless Skinless Chicken Breasts
1 28oz can diced tomatoes
1 lb bag of frozen yellow corn
1 small can of chili peppers chopped
2 cans black beans drained and rinsed
1 large onion chopped
4 cups reduced sodium chicken broth
2 tbsp chili powder
3 tsp ground cumin
1 tsp cayenne pepper
Directions
Combine all ingredients in slow cooker. Cook on high for 4 hours. Just before serving remove chicken and cut in pieces. Then add back into slow cooker. Makes 8-10 one cup servings. * Draining and rinsing the beans helps cut down on the sodium. Also drain and rinse chili peppers.
