Salmon Herb Quiche (no crust)

Introduction

Low Fat, Low Calorie, very tasty for brunch, or room temperature for lunch at the office. Use the green herb of your choice for different flavors: fresh Cilantro or parsley or basil, etc. Low Fat, Low Calorie, very tasty for brunch, or room temperature for lunch at the office. Ingredients

    3 eggs
    1 cup egg beaters egg substitute
    1 onion, diced
    4 cloves garlic, minced
    teaspoon Mrs. Dash or other seasonings
    cup fresh cilantro or parsley or basil, chopped
    2 ounces Neufchatel cheese
    2 ounces fat free cream cheese
    1 cup fat free cottage cheese
    2 leftover salmon fillets (about 3-4 ounces each)
    Salt & pepper
    1 teaspoon paprika


Directions

Saute onions & garlic in 1 teaspoon water & Mrs. Dash until partly cooked-about 3 minutes.
Spray pie plate w/ Pam.
Spread Onions & garlic into pie plate.
Break salmon up into bite sized pieces & place on top of onions.
Dot with Neufchatel cheese.
Beat eggs well with eggbeaters, salt & pepper and mash in cottage cheese & cream cheese.
Dump all EXCEPT half a cup of the egg mixture into pie plate. Mix cilantro into the remaining egg mixture & spread on top of pie plate.
Sprinkle with paprika for color
Bake 35 minutes at 400 degrees, or until set in the center. Allow to rest 5 minute before serving.
