Chicken with Apricot Sauce

Introduction

Ingredients

    16 oz boneless chicken breats, cut into approximately 2-in strips
    1 tbsp olive oil
    2 tsp garlic, minced or crushed
    1 tsp grated ginger root
    1/4 cup orange juice
    2 oz white wine
    1-2 tsp soy sauce
    1 tbsp apricot or other fruit jam

Directions

In a 10-12 inch non-stick frying pan, saute' the chicken strips in olive oil, garlic and ginger until cooked through and lightly browned.
Move chicken to a platter.
To the pan juices, add the remaining ingredients. Turn up the heat/flame until the sauce has reduced.
Add the chicken back to heat through and serve with rice, couscous or other grain.

    My boyfriend and I were watching Rachel Ray make apricot chicken, and we decided to try a healthy version of it instead. This recipe was great. I replaced the white wine with balsamic vinegar (that's what Rachel Ray used), and it turned out amazing! - 12/10/07

    This really didn't have a lot of flavor in our opinion. It may be because we are used to Thai food and this dish just didn't measure up. I like that the dish is so low in fat and calories, but I really had to doctor it up so that it had some flavor. - 4/15/08

    This recipe was so easy to prepare and cook, fast, and easy, plus it has great flavor. It was excellent with brown rice and a green vegetable.     Great! I only used 2 chicken breasts, but still used the same amounts for everything else...it gave it some extra sauce and was fantastic with brown rice! Oh, and I used balsamic vinegar instead of the white wine. - 4/14/09

    I made this for dinner tonight! We loved it. I did double the sauce ingredients based on other responses and it was just enough. I also used reduced sugar apricot jam. I served this over brown rice and a side of green beans. Thanks for the recipe! - 3/18/09

    Made this recipe last night for dinner with a few minor adjustments. I didn't have fresh ginger root so to the sauce I added a very slight amount of crystallized ginger root I had on hand, 1 Tbsp of butter and a slight shake of crushed red pepper flakes. Very Good, will definitely make again! - 3/18/09

    I substituted teriyaki sesame ginger barbeque sauce for the soy sauce to reduce sodium and it was great. I also added cinnamon like someone else suggested. - 8/20/07

    This was incredible! I served with quinoa and fresh steamed spinach - what a hit! The glaze (not really a sauce) is just slightly sweet and Asian-inspired. Make sure to really brown the sliced chicken, the flavor compliments beautifully - this is a MUST TRY!! - 4/25/07

    I love anything with apricots. I do something similar... just add a teaspoon or two of dry mustard to about 6 oz. of apricot jam ("Simply Fruit" has no added sugar!) and glaze baked chicken the last 30 minutes of cooking time. Sweet with a nice kick! Oohhhh, yummy!! - 4/30/09

    this sounds great! i'm at work right now and it's not grocery shopping day. I already know that I don't have apricot jam at home, but I do have no-sugar-added raspberry, which will be great with balsamic vinegar (since I don't have any wine either!) I think I'll make it tonight! - 3/17/09
