1 head of celery, chopped
2 medium onions, chopped
2 large apples, grated
2 1/2 cups cooked great northern beans
Broth made from 8 cups water and bouillon or 8 cups of stock or broth of your choice
Notes: this recipe can be modified very easily for dietary needs. It can be made vegan by choosing vegetable stock instead of bouillon, and lower in sodium by cooking dry beans ahead of time to add to the soup (and of course, a low-sodium stock or broth).
Sweat the onions in a large saucepan using the oil over low heat. While these are getting soft, chop or process the celery, and add it to the pan. Grate the apples, including the skin, into the saucepan. Cook and stir all for about 10 minutes, then add beans and broth. Increase heat until it comes to a simmer, then lower heat and continue simmering for about 30-45 minutes.
