Roasted Turkey Soup

Number of Servings: 5

Ingredients

    2.25 cups, or 12 oz., roasted turkey breast meat, chopped or shredded
    2 cups baby carrots
    1 cup frozen pearl onions
    .5 cups celery, diced
    4 cups chicken broth, fat free low sodium
    2 cups zucchini, diced
    10 oz. red potatoes, cubed
    1 bay leaf
    water

Directions

Pour the chicken broth into a large, heavy saucepan or Dutch oven; add the carrots, onions, celery, and bay leaf. Bring to a boil; cover, reduce heat, and simmer 15 minutes. Add the potatoes; simmer, covered, 10 minutes. Add zucchini and chopped turkey; cover and simmer 10-15 minutes, or until vegetables are tender.
Add water as necessary while cooking.
Season to taste. (I like salt, pepper, and thyme.)
