Low Carb New York Ricotta Cheesecake

Number of Servings: 16

Ingredients

    24 ounces neufchatel cheese
    1 C. part skim ricotta cheese
    1/2 C. light sour cream
    1 1/2 C. Splenda
    1/3 C. Heavy cream
    1 TBSP vanilla extract
    1 TBSP fresh lemon juice
    3/4 C. Egg Beaters

Directions

Preheat oven to 400 degrees.
In a shallowroasting pan big enough to fit the cake pan, pour about 1 inch of water and place it on the center rack of the oven to preheat.

Mix everything together on low speed in with mixer. Pour batter into a greased springform pan. Place pan into the heated water bath. Bake for 15 minutes, and then lower the oven temp to 275. Continue baking for 1 1/2 hours. Turn off oven and let cake cool in oven for 3 hours. Remove and chill.
Makes 16 servings.
