Introduction

I use half meatless ground beef and half lean ground beef to cut the fat in this recipe while keeping all the flavor. The carrots and celery add fiber and help you get your servings of veggies for the day. Ingredients

    1 cup chopped celery
    1 cup sliced carrots
    1 medium onion, peeled and quartered
    3 garlic cloves, minced
    1 Tbsp canola oil
    3/4 cup ketchup, divided
    1/3 cup dry breadcrumbs
    2 large eggs
    1 (12 oz) package meatless ground burger (such as Boca)
    12oz lean ground beef (90/10)
    Cooking Spray

Directions

1. Preheat oven to 350
2. Combine first 4 ingredients in a food processor, process until finely chopped
3. Heat oil in a lg nonstick skillet over medium-high heat. Add onion mixture; saute 5 minutes or until tender.Place onion mixture, 1/2 cup ketchup, breadcrumbs, eggs, ground burger and ground beef in a lg bowl, mix well.
4. Place mixture in a 9x5 in loaf pan coated with cooking spray. Spread remaining 1/4 cup ketchup over loaf.
5. Bake at 350 degrees for 35 minutes. Let stand 10 minutes. Slice into 7 slices. Makes 7 servings.
