chili or cajun seasoning
I usually slow cook my chicken for several hours on low heat in a pot of water....but feel free to cook your chicken however you please before adding the lemon and cajun. Cooking the chicken over low heat in a pot of water makes it very tender!
After the chicken is fully cooked, pour the lemon juice into a glass baking dish and make a cut in one side of the chicken, place the cut side into the lemon juice and sprinkle cajon or chili powder on top the chicken. Place in the oven on the middle rack and bake for 10 minutes.
Let cool and serve! Goes wonderfully with rice, noodles or a cheese sause!
