White bean chicken chili

Introduction

Great for crock pot to! Wonderful for cold days. Great for crock pot to! Wonderful for cold days.
Number of Servings: 6

Ingredients

    2 boneless skinless chicken breast
    1 lb dry great northern beans
    2 cups of chicken broth
    1tbsp cilantro
    1/2 cup diced green chilies
    1tsp garlic

Directions

Soak beans overnight (or boil for several hours), boil chicken until full cooked then shred, when beans are done drain off part of water and add chicken, broth, cilantro, garlic, and green chilies, bring to a boil and cook until desired thickness. Feeds a family of six. Serve with cornbread and enjoy.

  • i have found that grilling the chicken gives this recipe a great smokey flavor. I use a combination of green chilis and hot peppers (I can my own) - 6/16/10

  • It was hot due to the jalapenos but it was bland and needed salt. I added onion powder (fresh would be better), basil (would be better left out!), cumin, and thyme. I also added about 1 tsp. salt. I'm still looking for a GREAT recipe for this food. - 11/8/07
