Number of Servings: 3

Ingredients

    *Vegetable Stir-Fry, Frozen Carrots, Sugar Snap Peas, Onions, mushrooms, 4.5 cup
    *Cajun Seasoning, .5 tsp
    *Tomato products, Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano,14 oz can, drain save liquid
    *College Inn Chicken Broth - 99% Fat Free, 1 cup
    *Couscous (dry), 1 cup
    Shrimp, cooked, 16 oz
    Parmesan Cheese, grated, 3 tbsp

Directions

Saute veggies until thawed, add canned tomatoes.
Add liquid from tomatoes and chicken broth to equal 14 oz.
and heat to boiling.
Add couscous.
Remove from heat, let stand 5 minutes.
Fluff couscous with fork.
