Tortellini Soup

Introduction

Number of Servings: 4

Ingredients

    6 cups chicken broth
    1 9-oz. pkg. three cheese tortellini
    1 cup chopped tomatoes
    1 15-oz can of cannelini beans, rinsed and drained
    1/2 cup julienned basil leaves
    2-1/2 Tbsp balsamic vinegar
    1/4 tsp salt
    1/4 tsp pepper
    1/4 cup grated parmesan cheese

Directions

Bring broth to a boil; turn heat to low, add tortellini, and cook for 6 minutes. Add tomatoes and beans; simmer an additional 5 minutes. Remove from heat and stir in basil, vinegar, and salt. Divide into four bowls; top each with pepper and parmesan cheese
