Ingredients

One spaghetti squash
16 oz marinara sace
2 cups frozen peas
1 cup 1% cottage cheese or ricotta cheese
romano or parmesan to taste
salt
pepper
Directions
Halve spaghetti squash and remove seeds. Put cut side up on a microwave-safe dish on a damp paper towel. Microwave on high for 15 minutes. Meanwhile, heat the marinara and peas on the stove on medium heat. When the squash is done, scrape the strings into a bowl and add to the sauce on the stove. Simmer for 5-7 minutes until sauce is no longer liquid. Remove from heat and stir in cottage cheese or ricotta cheese. Season with salt & pepper and add parmesan or ricotta to taste. Makes 4 servings.
