Hot Pepper Shrimp

Introduction

Everybody I know who likes a bit of heat loves this super simple appetizer - which can be eaten hot or room temp. Adjust the amount of pepper to your liking. Number of Servings: 6

Ingredients

    2 C Water
    4 Scotch Bonnet chiles or Habanero chiles, halved
    3 Green Onions, corasely chopped
    3 Large Fresh Thyme Sprigs
    3 Garlic cloves, peeled and crushed
    2 T kosher salt
    1 Bay leaf
    1 1/2 t whole allspice
    1 lb uncooked large shrimp, peeled

Directions

Combine water, chiles, green onions, thyme, crushed garlic, salt, bay leaf and allspice in heavy, large saucepan. Bring to a boil. Reduce heat; cover and simmer 10 minutes to blend flavors. Add shrimp and bring to a boil. Remove pan from heat; let stand until cooked through, about 20 minutes. Drain, discarding liquid. Transfer shrimp to bowl and serve. (I have found that once I add the shrimp and bring back to a boil, turning all-the-while that the shrimp are cooked just about right).
