Oat-baked Chicken

Introduction

An interesting replacement for fried chicken. The oats give a little extra health benefit. An interesting replacement for fried chicken. The oats give a little extra health benefit.
Number of Servings: 6

Ingredients

    1 lb chicken (I use thighs)
    2 tbsp margarine
    1 c oats
    0.25 c parmesan cheese
    1 tsp paprika
    0.5 tsp pepper
    0.5 c liquid egg (or similar)

Directions

Heat oven to 375

Heat margarine and pour into baking pan. Mix the dry ingredients in a bowl. Dip chicken in the egg then coat with the egg mixture. Place coated chicken in the baking pan. Retain excess oat mixture.

Bake uncovered for 30 minutes then turn. Add oat mixture if necessary. Bake for an additional 20-30 minutes or until juices run clear.

Serves 6
