Macaroni a la Greque

Introduction

My best friend's family got together and pooled their recipes into a family cookbook. I'm not related, but I scored a copy of the cookbook which is one of the best I've ever had! Number of Servings: 6

Ingredients

    1 large onion, chopped
    1 lb. ground veal (or ground beef or lamb)
    1/2 tsp. cinnamon
    1/2 tsp. allspice
    3/4 tsp. salt
    1/4 cup butter (1/2 stick)
    1/4 cup flour
    2 1/2 cups milk
    3 Tbsp. tomato paste
    1 egg
    1/2 cup Parmesan cheese
    8 oz. macaroni, cooked and drained

Directions

Brown the meat, add onions and cook until soft. Drain the fat; add spices and set meat aside. Melt butter in the same skillet; add flour, stir and cook a little over medium heat. Add the milk and stir with whisk over medium-low heat until thickened. Add tomato paste. Beat the egg and stir quickly into the mixture. Stir in 1/4 cup of the Parmesan cheese (half) and add the meat back in. Add the macaroni and stir to thoroughly mix. Pour into a casserole dish, sprinkle with remaining Parmesan and bake at 350 degrees for 30 minutes. Make 6 servings.
