Green Chili and Black Bean Bake

Introduction

Slow cooker recipe for a yummy black bean bake. Prep time is less than 10 minutes, and then this yummy dinner cooks on low in the slow cooker for 4-6 hours. *Calories are for 6 servings. 4 servings would be more calories each.

Original Recipe called for 1 cup of flat beer but I exchanged the beer for stock. Can use chicken stock, vegetable stock, etc, but if using chicken stock, it will no longer be vegetarian.

Ingredients

    Vegetable Oil - 1 tbsp
    Onions, raw - 1 large
    Bell Pepper - 1 whole green
    Garlic - 2 cloves
    Jalapeno Peppers - 1 pepper
    Chili powder - 2 tsp
    Cumin - 1 tsp
    Oregano - 1 tsp
    Beans - 5.25 cup (about 3 cans)
    Tomatoes - 2 cups wedges (or 3 whole)
    Stock - 1 cup
    Ketchup - 1 cup (16 tbsp)

    Tortillas, sour cream, and shredded cheese for topping--none of which are included in calorie count.

Directions

Heat oil in large frying pan and cook the onion, bell pepper, garlic, and chile for 3-4 minutes. Stir in the chili powder, cumin, and oregano and cook for 1 minute.

Stir in beans, tomatoes, liquid (water, stock, or beer), and ketcup. Season to taste with salt and pepper.

Pour in slow cooker and cover. Cook on low for 4-6 hours. Serve with tortillas and top with sour cream and shredded cheese. *Tortillas and toppings not included in calorie count.*

Serves 4-6 depending on size.
