IntroductionBlack bean salsa made without corn. Serving size is approximately 1/2 cup. Black bean salsa made without corn. Serving size is approximately 1/2 cup.
1 can black beans, rinsed and drained
1 bell pepper (I like red & yellow), diced
1 shallot, minced
1/2 c. cilantro
juice of 1 lime
1 T chili powder
Refrigerate 1 hour.
Makes 4 1/2-cup servings. Nice side to green chili enchiladas or fajitas.
