Introduction

Black bean salsa made without corn. Serving size is approximately 1/2 cup. Black bean salsa made without corn. Serving size is approximately 1/2 cup.
Number of Servings: 4

Ingredients

    1 can black beans, rinsed and drained
    1 bell pepper (I like red & yellow), diced
    1 shallot, minced
    1/2 c. cilantro
    juice of 1 lime
    1 T chili powder

Directions

Combine all ingredients in a small bowl.
Refrigerate 1 hour.
Serve.

Makes 4 1/2-cup servings. Nice side to green chili enchiladas or fajitas.
