Zucchini Garden Chowder

Ingredients

    1 med. Zucchini chopped
    1 med. summer squash chopped
    1 med. onion chopped
    2 T.parsely
    1 tsp basil
    2.5 T butter
    1/4 C. flour
    dash salt
    pepper to taste
    2 c. water
    1 chicken boullion cube
    1 can reduced fat reduced sodium chicken broth
    1 T. lemon juice
    1 14.5 oz diced tomatoes undrained
    1 can evaporated milk 2%
    10 oz. frozen corn
    shredded cheddar cheese to top

Directions

Over medium heat cook zucchini, squash, onion, basil and parsely in butter until vegetables are soft. Stir in flour, salt, pepper. Stir in water. Add boullion cube. Add in chicken broth and lemon juice. Mix well. Bring to a boil. Cook and stir for 2 minutes. Add tomatoes, corn and milk. Bring to a boil. Reduce heat. Cover and simmer for 5 minutes or until corn is tender. Top with cheese to serve. Makes 2.5 quarts. Serving size about 1 cup.
