Ginger Salmon with boy Choy

Ingredients

    2 tsp Canola Oil
    2 T minced fresh Ginser
    2 tsp minced Garlic
    1.5 lbs Bok Choy
    4 oz Shiitake Mushrooms
    1 C Shredded Carrots
    4 Salmon Fillets (appx 5 oz each)
    3 T Soy Sauce - sodium reduced
    3 T Orange Marmalade

Directions

1. heat broiler

2. heat oil in large oven proof non stick skillet. Add 1 T ginger and 2 tsp garlic; cook over low heat until fragrant.

3.Add Bok Choy, (halved lengthwise then sliced into 1 inch strips), sliced mushrooms and carrots. Stir fry 4-6 minutes until tender crisp. Remove to serving bowl and keep warm.

4. Place salmon skin side down in skillet. In a small cup mix remaining 1 T ginger soy sauce and marmalade. Soon half of mixture over salmon.

5. Broil 4-6 minutes until salmon is just cooked through. Drizzle wtih remaing soy sauce mixture.

To server Place salmon on bed of Boy Choy.
