Seafood Chowder

Ingredients

3 cups chicken stock, low sodium
2 small onions, finely diced
3 medium potatoes, peeled and cut into 1/2-inch cubes
1/2 lb cod fish, chunked (I use cod cheeks for flavour)
1/2 lb salmon or trout, chunked
1/4 lb shrimp (If large cut in half)
1/4 lb scallops (If large cut into bite-size chunks)
1 can 2% evaporated milk
2 tbsp margarine
Salt and pepper to taste if desired
Directions
In a large stock pot heat broth to boiling. Add potatoes and cook on medium-high about 7-10 minutes until potatoes start to soften.
Add onions and cook about 5 minutes.
Add cod and salmon and simmer over medium-low heat about 3 minutes or until seafood has changed colour. Then add shrimp and scallops. Cook another 2-3 minutes until shrimp are pink and scallops are opaque.
Add milk and margarine. Stir and simmer until heated through.
Salt and pepper to taste.
Serves 10.
