Chicken Pesto Primavera

Ingredients

    1 Pesto Cubes, SEE MY RECIPE
    2-3 tbsp hot water
    2 Chicken Breasts, no skin
    8 oz Ronzoni, Whole Wheat Penne Rigate
    1 bag (16 oz) frozen Vegetable Mix
    0.5 cup Parmesan Cheese, grated
    non-stick cooking spray

Directions

Cut chicken into 1-inch cubes and dissolve pesto cube in 2-3 tbsp water.
Cook pasta according to directions, drain.
Spray non-stick skillett with cooking spray and brown chicken. Add vegetables and sautee until tender, add dissolved pesto cube, stir. Add pasta to skillet and toss to combine. Sprinkle Parmesan Cheese on top.

Recipe makes 4 servings, one serving is about 2 cups.
