1 cup diced carrots
4 tsp butter, divided
1 cup shr. cheddar cheese
.5 cup non fat cottage cheese
2 cups fresh broccoli florets
1/4 cup chicken broth 99% fat free
Cover and bake at 350 degrees F for 25 minutes. Uncover, sprinkle with remaining cheddar. Bake 5 minutes longer or until cheese is melted and vegetables are tender. Season with salt and pepper. Serve using slotted spoon.
