Introduction

Ingredients

    2 cups 5 grain with flax hot cereal
    3 cups white whole wheat flour
    2 cups unbleached all purpose flour
    1.5 tabl. yeast
    1 tbl. kosher salt
    1/4 c vital wheat gluten
    3 1/2 cups lukewarm water
    1-2 tablespoons seed mixture for top

Directions

4 loaves 10 servings each

1. whisk together all dry ingreadients except the seeds in a 5 quart bowl.
2.add water and mix without kneading.
3.cover not air tight and let rest until rises and collapes,approimately 2 hours.
4.dough can be used immeaditely,or it can be refrigerated in a lidded not air tight containerand used over the next week.
5. on the day you want to bake it,dust the surface with flourand cut off a grapfruit size piece, quicklyshape into a ball by stretching the surfaceof the dough around to the bottemon all 4 sides.
6 elongate into an oval, and let rest 90 mins for refrigerated dough,or 40 mins for fresh. Covered loosely cookie sheet or silacone mat spinkled with cornmeal.
7.1/2 hour before baking, preheat oven with baking stone on middle rack and broiler pan on lower rack to 450.
8. just before baking,with a serrated knife cut 1/4 inchh deep slices diaginally,brush with water and spinkle seed mixture on top.
9 slide loaf onto hot stone, pour 1 cup of water into broiler pan.
10 bake about thirty miniutes till richly brown and firm.
11. cool on a rack befre slicing.
