1 cup quinoa - rinsed
2 cups water
1 cucumber chopped
2 scallions chopped
fresh mint chopped
2 lemons, juiced
2 tbsp. extra virgin olive oil
2.Combine in a bowl olive oil, lemon juice and salt. Add in quinoa as well as remaining ingredients and refrigerate until chilled to serve.
