Mini Broccoli Cheese FrittataSubmitted by: LEGALGRL
1/2 c. egg replacer (such as Egg Beaters)
4 large broccoli florets, chopped (about 1/2 cup)
1 slice cheddar cheese (1 oz)
Spray four cups of a muffin tin with non-stick cooking spray. Divide 1/2 of the broccoli between four cups. Break cheese into four equal pieces and place on top of the broccoli. Place remaining broccoli on top of cheese. Add egg replacer until it covers the broccoli (it will be almost to the top).
Bake at 350 degrees for approximately 20 minutes or until eggs are firm and no longer runny. Check often after 10 minutes to ensure eggs do not overcook.
Let stand for 5 minutes. Using a butter knife, release edges of eggs from the pan, using caution as frittatas are very hot.
Makes 2 2-piece servings. Recipe can easily be doubled or tripled for more servings.
