Berta's WHITE BEAN SOUP WITH HAM

Introduction

Number of Servings: 6

Ingredients

    1 cup each onion, celery, carrot, finely diced
    1 teaspoon garlic, diced
    2-16 ounce cans of white beans, drained and rinsed
    2 cups fat free, low sodium chicken broth
    2 cups water
    6 ounces diced fat free ham (about a cup)
    1 1/2 cup cooked potato, diced
    2 teaspoon parsley
    1/4 teaspoon black pepper
    1 bay leaf (more is the leaves are small)

Directions

In a large saucepan, sprayed with cooking spray, combine the diced onion, celery and carrot. Cook over medium heat, stirring frequently to avoid scorching. Cook 5-10 minutes. Then add the remaining ingredients. Bring to a boil. Lover heat, cover and simmer about 30 minutes. Remove the bay leaf just before serving.

Makes 6 servings about 1 1/2 cups each.
