Greens on a Polenta Bed

Introduction

So delicious, and a great way to get your greens in! So delicious, and a great way to get your greens in!
Number of Servings: 4

Ingredients

    Fontina cheese, 1 cup grated
    Polenta, 18 oz, can use pre-cooked package
    Swiss chard, 3 cups, bite size pieces, washed, no stems
    Spinach, fresh, bite sized pieces, washed, no stems
    Mustard greens, same as other greens
    EVO, 1 tbsp
    Salt and pepper to taste

Directions

Wash and de-stem the greens, then break them into bite-sized pieces.
Put polenta and cheese in a saucepan. Heat and mix.
Swirl the EVO in a large skillet, then cook down the greens for about a minute, until they're bright green.
Serve greens over a bed of polenta/cheese mix immediately.
Enjoy!
