Authentic Indian Chicken Curry

Ingredients

2 pounds boneless skinless chicken breast, cubed
1 cup onions, diced
1 large tomato, diced
1 T cumin, toasted and ground
1 T coriander, toasted and ground
1 tsp turmeric
2 tsp ginger
5 gloves garlic, minced
2 tsp salt (or to taste)
1 T lemon juice
1 T mustard seed (black)
1 tsp red pepper (or to taste)
.5 tsp cinnamon, freshly ground
Curry leaves- one or two stems
1 cup basmati rice (you can microwave it for 20 minutes with two cups of water and a bit of salt)
Directions
First set the rice to cook- either in the microwave (as directed) or on the stove.
Brown the onions in 1 T of the oil. Then add the garlic, ginger, cumin, coriander, red pepper, cinnamon, and turmeric. Add the tomato and salt. Cook for a few minutes. Add the ginger and lemon juice. Add the curry leaves (whole) and chicken.
Cook until the chicken is done, 10-15 minutes, depending on how big you cut it.
Serve over the rice or stir the rice in. Garnish with fresh cilantro.
