Authentic Indian Chicken CurrySubmitted by: LOTUS737

2 pounds boneless skinless chicken breast, cubed
1 cup onions, diced
1 large tomato, diced
1 T cumin, toasted and ground
1 T coriander, toasted and ground
1 tsp turmeric
2 tsp ginger
5 gloves garlic, minced
2 tsp salt (or to taste)
1 T lemon juice
1 T mustard seed (black)
1 tsp red pepper (or to taste)
.5 tsp cinnamon, freshly ground
Curry leaves- one or two stems
1 cup basmati rice (you can microwave it for 20 minutes with two cups of water and a bit of salt)
Brown the onions in 1 T of the oil. Then add the garlic, ginger, cumin, coriander, red pepper, cinnamon, and turmeric. Add the tomato and salt. Cook for a few minutes. Add the ginger and lemon juice. Add the curry leaves (whole) and chicken.
Cook until the chicken is done, 10-15 minutes, depending on how big you cut it.
Serve over the rice or stir the rice in. Garnish with fresh cilantro.
Calculated for 4 HEARTY servings, could easily serve 6.

The recipe is great. Check you NI...when I did it (as this looked WAY low to me) I came up with a totally different number. Look at your actual ingredient details (under the nutrition information) as opposed to what you listed as the ingredients used, they are two different things. Don't be fooled, y'all! - 7/6/09
