Spicy Pilau - per 1 c serving

Number of Servings: 18

Ingredients

    4 c brown rice
    4 tbsp butter
    2 large sweet onions sliced thin
    7 boneless skinless chicken breasts (12 oz each raw) - cut in half or large chunks
    4 c plain fat free yogurt
    6 cloves minced garlic
    1 tsp powdered ginger
    1 tsp cayenne
    4 tsp salt
    cardamom seeds - 6 pods worth, or 1 tsp ground
    1 c chicken broth
    2 large green peppers, sliced

Directions

Soak 4 c brown rice in water 30 min, then drain.
Brown onions and chicken in butter
Add yogurt, garlic, ginger, cayenne, salt and cardamom. Cook on high heat 30 min
Pour rice on top of chicken
Add enough chicken broth to cover the rice
Arrange peppers on top, cover and bring to a boil.
Cook on low heat until the rice is done - 35-45 minutes
Makes 18 cups
