Vegan Cornbread

Ingredients

    1cup cornmeal
    1/2 cup all purpose flour
    1 tsp baking powder
    1/6 cup canola oil
    1T maple syrup or molasses
    1 cup unsweetened almond breeze
    1 tsp apple cider vinegar
    1/2 tsp salt

Directions

Preheat oven to 350
Spray 6x6" baking dish or a small cake pan with oil spray

In a medium bowl wisk together the almond milk, and vinegar. Add oil and maple syrup or molassas and whisk until fully combined, thick and somewhat frothy.

In a large bowl, sift together the dry ingredients. Make a well in the center of the dry ingredients and add the wet, combining with a wooden spoon or stiff spatula. Stir until just mixed.

Bake 25-30 minutes until it passes the toothpick test.
