Asian Turkey with Vegetables and Cashews

Introduction

This recipe is loosley based on the recipe "Asian Broccoli Chicken with Cashews" by Kraft Canada. I made it tonight for my family and it was a big hit. Number of Servings: 6

Ingredients

    1tbsp Peanut oil
    1lbs turkey breast, cut into small pieces
    2 cloves garlic, minced
    1 medium onion, chopped
    1 cup sugar snap peas, strings and tips removed
    1 medium celery stalk, chopped
    2 cups white mushrooms, sliced thin
    1 large red bell pepper
    1/2cup water
    3oz Kraft Mandarin Orange with Sesame dressing
    2tbsp light soy sauce
    1/3 cup cashews
    3 cups brown rice, cooked

Directions

HEAT oil in large skillet on medium-high heat. Add turkey and garlic; cook 6 to 8 min. or until chicken is done, stirring occasionally. Remove turkey from skillet; cover to keep warm.

ADD vegetables and water to skillet; cover. Cook 3 to 4 min. or until vegetables are crisp-tender, stirring occasionally.

STIR in turkey and all remaining ingredients except nuts; cook 2 min. or until heated through, stirring occasionally. Top with nuts

Serve over brown rice.
