Turkey Tacos with Pico de Gallo

Ingredients

    For Taco Meat:
    1/2 lbs. Ground Turkey
    1/2 Medium-sized onion diced
    1 small can of diced green chillies
    1 packet Taco Seasoning (low sodium)
    1/4 cup water

    Pico de Gallo:
    2 Small Roma Tomatoes Diced
    3 Tbs chopped Cilantro
    1/2 Cup Chopped Green Onions
    Splash of Lemon or Lime Juice
    Salt and Pepper to taste

    6 Mission Carb Balance Flour Tortillas
    1/4 Cup Shredded Cheddar Cheese

Directions

In a skillet over medium heat, brown the ground turkey, breaking up as it cooks. Once almost cooked add the onion, and continue to cook until the onion begins to soften. Once the onion is soft add the can of green chillies (do not drain). Add the taco seasoning with 1/4 cup water. Simmer on low until ready to serve.

In a separate bowl mix the tomato, cilantro, green onions, and lime juice. Add salt and pepper to taste.

Warm the tortillas.

Split the taco meat between the 6 tortillas, top with 1/4 cup pico de gallo and a pinch of cheese. Consider adding a dollop of fat free sour cream (not included in the nutrient content)

Enjoy.
