Chunky Pickled Pork Soup

Introduction

This soup is very very delicious. We usually do up one batch and it lasts us three meals (we are a family of 6). It is very easy to make and economical. This soup is very very delicious. We usually do up one batch and it lasts us three meals (we are a family of 6). It is very easy to make and economical.
Number of Servings: 18

Ingredients

    2 medium potatoes, peeled and diced
    1kg sweet potatoes, peeled and cut into chunks
    1/2 butternut pumpkin, cut into chunks
    5 medium carrots cut into chunks (not peeled)
    1/3 cup of yellow split peas
    2/3 cup green split peas
    1 cup rice (uncooked)
    1 cup barley
    1/4 cabbage
    3 2/3 cups of Bok Choy, sliced (including stem)
    3 1/2 cups green beans
    1kg pickled pork, whole
    2 Tablespoons white pepper
    Water

Directions

Place potatoes, sweet potatoes, pumpkin and carrots to a 11.5L Stockpot.

Add the rice, barley, yellow and green split peas.

Add the rest of the veges.

Place the pickled pork on top of veges.

Sprinkle the pepper over the top.

Add water until the food is all covered. You may have to push the pork down a little.

Bring to the boil, then simmer for 2 hours.

Remove the meat and cut into bite size pieces.

Return the meat to the pot and bring back to the boil. Serve.
