Kale Diet Soup

Introduction

Filling and Nutritious! Similar to cabbage soup w/o the gas inducing ingredient. Filling and Nutritious! Similar to cabbage soup w/o the gas inducing ingredient.
Number of Servings: 8

Ingredients

    1 can 99% fat free beef broth
    2 Cups water
    1/2 can Ro-Tel diced tomates and peppers
    4 Cups Great Value Vegetable Juice (similar to V-8)
    1 Cup Quinoa already cooked per package instructions
    1 bay leaf
    1/2 tsp each rosemary, oregano, and basil or to taste
    1 tsp each dried onion and garlic again to taste
    6 cups Kale remove rib and use leaves - chopped

Directions

add all liquid ingredients in pot to boil then simmer - adding Kale and Quinoa and season to taste. Allow to simmer about 20 minutes after the Kale is limp to marry all flavors. ENJOY!!!
