Hearty Lentil Soup

Introduction

Number of Servings: 8

Ingredients

    3 large carrots, shredded with vegetable peeler
    1 yellow onion, finely chopped
    2 tbsp. olive oil
    2 tsp. dried marjoram
    1 can petite-cut diced tomatoes
    6-8 cups Swanson chicken broth (99% fat free) (or vegetable broth for vegetarians)
    2 oz. dry white wine

Directions

Heat the olive oil on low and add shredded carrots and chopped onion -- sautee until tender. Season with 2 tsp. marjoram, salt and pepper to taste.

Add lentils (rinsed and picked over), tomatoes, and 6 cups broth. Bring to boil, turn down heat and allow to simmer for one hour.

Check occasionally and add more broth if necessary to achieve desired consistency. (I think it thick, like a stew).

After an hour, once lentils are tender, add a splash of dry white wine.

Serve hot, with cheddar cheese for a delicious, melting garnish. Makes 8-10 servings; freeze any extra to have another time!
