ED'S Original Italian Meatballs

Ingredients

    1/3 cup non fat milk
    1 slice Sara Lee Whole Wheat Bread, crust removed
    1 lbs lean ground turkey
    1 shallot chopped finely
    2 tbsp Basil chopped finely
    1 large egg
    .5 tbsp olive oil
    3 tbsp Parmesan Cheese grated
    .5 tsp salt
    1 tsp pepper, black
    1/4 cup seasoned bread crumbs finel ground


Directions

Makes 20 meatballs, Serves 4 with 5 meatballs each

Heat milk and soak bread slice in milk. Mash bread in milk until smooth. Set aside to cool.

In a mixing bowl combine turkey, shallots, basil, nutmeg, parmesan cheese,olive oil, egg, salt, and pepper. Mix thoroughly but gently by hand.

Shape into meatballs about 1 inch in diameter. Roll the meatballs in the bread crumbs. Line a baking sheet with foil and spray with oil. Bake for 40 minutes at 350 degrees and turn once at 20 minutes.
