Cabbage and Radish Salad

Ingredients

    1/2 head green lettuce
    1/4 head red lettuce (original recipe calls for radacchio)
    1 carrot
    2-3 scallions
    fennel

Directions

slice all vegetables thin. gradually add 2 tsp sea salt, while massaging vegetable to distribute salt. massage until veggies begin to release water. when veggies wilt, put them in a mound, put a plate on top with some kind of heavy weight (eg. filled tea kettle, etc.). press for 35 min to 1 hour.
