1 can diced or crushed tomatoes
4 medium Gold Potatoes - diced
3 TBSp Onions - diced (or whatever you prefer)
Add spices to your liking.
Can be served over rice, cous cous, quinoa, or (as I did) put into lettuce wraps.

Added a Large carrot sliced and some bell pepper from the garden,and celery, put all in crock pot and simmered on low 6 hours. Yummy! - 10/31/10
