Spicy Fiberlicious Goulash

Introduction

Ingredients

    Ground beef, lean, 12 oz
    *Barilla Plus - elbows, cooked, 2 cup
    *Rotel Tomatoes Orgininal Diced Tomatoes & Green Chilies, 2 10 oz. cans
    *Beans, Kidney Beans, Dark Red, Bush's, 1 16oz can
    *Chili Powder, 1 tsp
    *Italian Seasoning, 2 tsp
    *Kosher Salt, 1 tsp
    *Black Pepper (Ground), .5 tsp
    Onions, raw, 1 medium (2-1/2" dia)
    Celery, raw, 2 stalk, medium (7-1/2" - 8" long)
    2 cups of water

Directions

1. Brown the meat in a large skillet, adding the salt to season meat while heating water in a saucepan to cook noodles.
2. Chop the onion and celery into small pieces.
3. After meat is brown, rinse in collander with hot water, return to pan.
4. Add the chopped onions and celery and cook while adding the spices
5. Pour in the diced tomatoes, stir in the water.
6. Simmer 10-12 more minutes until noodles are done.
7. Serve noodles into a pasta bowl.
8. Pour a serving of the soup over the noodles.

Tip: Although I am cooking for 3, I often prepare 4 servings to put one away for the next day or so. When noodles are involved, store in separate containers to keep noodles from getting overly soft.

Viola! Dinner in 30 minutes!
